Ingredients:
For the Chimichurri grilled chicken:
- 1 cup fresh cilantro
- ⅔ cup fresh parsley
- ¼ cup fresh oregano
- 2 garlic cloves, minced
- ¼ cup red wine vinegar
- ⅔ cup olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon crushed red pepper flakes
- 1 pound chicken thighs
For the couscous salad:
- 2 cups cooked couscous
- ¼ cup Chimichurri
- 1 cup cherry tomatoes, halved
- ⅓ cup crumbled feta cheese
- 3 tablespoons chopped chives

- 8 ounces of your favorite pasta
- ¼ cup pine nuts
- 5 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 small zucchini squash, sliced into rounds
- 1 small summer squash, sliced into rounds
- kosher salt
- freshly cracked black pepper
- 4 ounces goat cheese, crumbled
- ¼ cup fresh basil leaves
Directions:
Start by cooking your pasta in salted boiling water. Then, toast your pine nuts until golden. Brown butter in a skillet, then cook garlic and zucchini until tender. Toss cooked pasta with zucchini, butter, and goat cheese until combined. Add your black pepper, pine nuts, and fresh basil. Serve immediately for a rich, flavorful pasta dish.
Summer Grilled Chicken Rice Bowls
