  • 2 tsp. ground cumin
  • 1 medium onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 Scotch bonnet or habanero chiles, 1 finely chopped, 1 whole
  • ½ cup green seasoning
  • Juice of 1 lime
  • Kosher salt
  • Sliced chives (for serving)

Directions:

Sure, the ingredients are massive, and the preparation is like preparing for a fiesta, but it will be all worth it. Start by marinating your goat with lime juice, the green seasoning, garlic, oil, curry powder, salt, and pepper for several, several hours.

To bloom the curry powder and cumin, use hot oil, where you also cook the goat in batches. Are you drooling yet? Then, sauté the onion, garlic, chili, and more green seasoning, before returning the meat, and simmering gently.
